 'Egg In Shell' Curry
Ingredients:
Egg
Onion (small variety)
Tomato (lemon sized)
Onion (chopped)
Ginger (chopped)
Ginger garlic paste
Milk
Nutmeg powder
Garam Masala powder
Red Chili powder
Cashew & raisin

Method:
Make small holes on one side of each egg shell and allow the egg white & yolk to come out
Wash shells very well and keep aside
Beat all egg white & yolk lightly, don't whisk
Mix chopped ginger, chopped onion, salt and nutmeg powder to egg
Pour this liquid again within the empty shells keeping a small space vacant near the hole
Seal the holes with soft flour dough and boil these eggs for 15-20 minutes. Keep another ten minutes in hot water to allow the egg liquid to set inside
Then take out water, break the shells and keep the set eggs aside
Heat oil lightly, fry the small whole onions and keep aside
In the same oil fry chopped onions till golden then add ginger garlic paste and red chili powder
Fry for 3 minutes, add 3 cups of water & salt
Allow to boil & put in whole onions and tomatoes, cover with a lid
Prick a fork to see whether onions are cooked
Add eggs, milk, nutmeg powder, garam masala powder and 2 tsp of sugar
Cook till gravy thickens
Garnish with fried & chopped cashew nuts & raisins
Serve hot with rice.
